I have an old sonora busato guitar that I would like to try fit a stimer 48 to, I tried a friends one and the strings just touched the pickup when pressed at the 12 fret.
The action is already reasonably high, Is there anything else that could help? string gauge, modify the stimer?

Probably not. You can maybe have a Luthier take the fingerboard off and put a taller one on. Then change the bridge as well. Not worth it.
Guzz pickup is very low profile, for situations like this.
Changing the guitar is not practical - clearance there is more about the break angle (ie. angle that the neck makes with the body) than anything else
Try just micing it. Mic stands are relatively light and portable these days.
